Carnaroli is graded superfino. The grains are slightly longer than Vialone Nano and remain more distinct through the cooking process. Carnaroli has a delicately nutty flavour and is ideal for wetter risotto. It traditionally accompanies seafood.

Vialone Nano Rice - for richer risotto
The rice is grown according to traditional methods of crop rotation and irrigated by pure underground springs in the verdant valley of Verona. The rice undergoes minimal processing, which ensures that the natural starches are in place to enrich the risotto, making it more flavoursome and creamy. A happy by-product of this is that the rice retains more vitamins and minerals as well as its germ, making it healthier than commercial products. There is also a better yield per kilo.
